These spinach scrambled eggs are a quick, high‑protein breakfast that’s simple, nourishing, and naturally gluten‑free.

This healthy gluten-free breakfast is made with only 4 ingredients and is the perfect high-protein breakfast. It is super easy to make, and you can add different ingredients to change up the flavour.
Some of the variations that I have made include, chorizo and eggs scramble, curry scrambled eggs or these turmeric scrambled eggs.
These spinach eggs recipe also works well as part of a Healthy Breakfast Salad.

HOW TO MAKE THIS RECIPE
Making these scrambled eggs is really easy.
Basically, you melt the butter in a frypan over moderate heat. Then you add the spinach and mix it through the butter until it has wilted, then you add the whisked eggs and seasoning and cook until you get your preferred egg consistency.
I highly recommend that you keep moving the eggs while they are cooking. I like to use a spatula or wooden spoon and keep moving the eggs to the center.

Super Easy Spinach Scrambled Eggs
Ingredients
- 1 tablespoon butter grass-fed
- 2 cups baby spinach
- 2 eggs whisked
- Herbamare seasoning or use your favourite seasoning or salt & pepper
Instructions
- Melt butter: Melt butter in a medium sized non-stick frypan over moderate heat.
- Cook spinach: Add the spinach and mix through the butter until the spinach has wilted.
- Cook eggs: Add the eggs and seasoning. Using a spatula or wooden spoon, move the eggs to the center of the pan. Keep doing that every 30 seconds or so until the eggs are cooked. It should only take 2-3 minutes for them to cook to a beautiful soft consistency.
- Serve: Remove from the heat and serve either on their own or with other breakfast elements like avocado, salmon or bacon.

I added 1/2 tsp of organic mined garlic from a jar with olive oil and after cooking I added 1/2oz fresh grated parm cheese. I used one whole package of organic spinach….likely 4 cups vice 2 but still tasted great!
