Breakfast Parfait

This chia Breakfast Parfait with gluten-free granola is a simple-to-make breakfast that is made with three delicious make-ahead elements - chia pudding, granola and fresh berries. Best of all it is gluten-free and dairy-free.

Ingredients

  • 1/8 cup chia seeds
  • 1/2 cup almond milk or your favourite milk
  • 1 tablespoon maple syrup honey or rice malt syrup would work
  • 1 teaspoon vanilla extract
  • 1/2 cup granola home made or store bought. Check out this gluten-free granola
  • 3/4 cup mixed berries strawberries, raspberries and blueberries work well

Instructions

  • Place the chia seeds in a small bowl. Add the milk, sweetener and vanilla extract, stirring to combine. Place in the refrigerator and let it set overnight. The next morning, remove from the refrigerator and check that the chia seeds have gelled. You can make this step ahead of time.
  • To make the parfait, layer a glass or bowl firstly with half of the chia mixture, then half of the granola, then half of berries. Then repeat.
  • Serve and enjoy.

Notes

The time listed does not include the time to make the granola, it only includes the time to make the chia pudding, wash the fruit and the time needed to put together the final product.
