Ingredients

Meatballs

  •  1.1 lbs beef mince
  •  1.1 lbs pork mince
  • 1 brown onion medium, finely chopped
  • 1 carrot medium, finely grated
  • 1/4 cup fresh parsley chopped
  • Salt and pepper

Tomato Sauce

  • 14 oz tinned tomatoes chopped preferably
  • 3-4 garlic cloves minced
  • 1-2 TBL basil fresh preferably, but can use dried or even an Italian herb mix
  • Salt and pepper

Instructions

  • Prepare meatballs: Combine meatball ingredients in a large mixing bowl, mixing lightly until well combined. Shape into desired size meatballs and add to the bottom of the slow cooker. I used a soup soon to shape mine.
  • Prepare sauce: Add sauce ingredients to the slow cooker, placing on top of the meatballs. Cook on low for 6-8 hours.

What should I serve these meatballs with?
I love to serve with steamed greens and baked sweet potato wedges or healthy oven baked fries.
What is the best way to store leftovers?
Leftover meatballs will keep well in the fridge for 3-4 days. Make sure you keep in a sealed container. When reheating in the microwave, use a microwave safe dish and heat on 50% power.
