Zucchini Pasta with Tuna and Tomato Sauce

This zucchini pasta with tuna and tomato sauce has become one of my favourite go-to recipes. It is super healthy and takes less than 15 minutes to make.

Ingredients
 
 

  • 4 zucchini medium
  • 1 tbl olive oil
  • 2-3 cloves garlic minced or thinly sliced
  • 14 oz tinned crushed tomato or tomato passata
  • 14 oz tuna tinned, drained
  • Pinch sea salt

Instructions
 

  • Make the sauce: Add the olive oil and minced garlic to a medium saucepan on medium heat and cook for 1-2 minutes. Then, add the tomato with a pinch of salt and bring to the boil on high heat, making sure you put the lid on the saucepan (to avoid any splattering). Then reduce the heat back down to medium and cook for 15 minutes until the sauce has thickened up. Keep the lid off and make sure you stir the sauce every few minutes.
  • Prepare the zucchini: Meanwhile while the sauce is cooking, prepare the zucchini, either by using a spiralizer, mandolin or a julieene peeler.
  • Cook The zucchini: Then cook your zucchini pasta either in microwave or on the stove top.
  • Microwave method: cook the zucchini in a microwave safe bowl for 60 seconds on high. I would recommend cooking in 30 second increments.
  • Stove top method: Heat 1 tablespoon olive oil in a medium frypan on moderate heat, then add your zucchini and saute for 1-2 minutes,
  • Add the tuna: Once the sauce is ready, add your tuna to the sauce and mix through. 
  • Add the zucchini: You can either add the zucchini to the sauce and mix through or you can add the zucchini to your pasta bowls and spoon the sauce on top.
