Raw Caramel Macadamia Bliss Balls

These delicious Raw Caramel Macadamia Bliss Balls combine two of my favourites, caramel and macadamia. They take less than 15 minutes to make and only 30 minutes to set in your freezer. Also included is the thermomix recipe.

Ingredients
  

  • 12 medjool dates pitted
  • 1 cup macadamias
  • 1/2 cup coconut oil melted
  • 1/4 - 1/2 cup maple syrup or raw honey or rice malt syrup (optional)
  • 2 tablespoons tahini either hulled or unhulled
  • 2 teaspoons vanilla extract
  • 3/4 cup desiccated coconut

Instructions
 

  • Process ingredients: Add all the ingredients (except the desiccated coconut) to a high speed blender (or food processor) and process until completely combined and smooth.
  • Firm mixture: Place mixture into the freezer until firm, approximately 30 minutes.
  • Roll into balls: Remove from the freezer and roll the mixture into small balls and coat in the desiccated coconut. Place on a lined baking tray and freeze until firm.
  • Store: Store in the refrigerator.

Notes

The cook time does not include the time it takes for these bliss balls to set in the freezer.
You can keep stored in your refrigerator for up to 1 week or you can store in the freezer for up to 6 months. You will need allow 15 minutes to thaw them out before eating.
