This week I am featuring Daniela Doyle and Michelle Kays from Thermo Foodie and The Chef. Thermo Foodie and The Chef is one of my favourite thermomix recipe sites. They combine two of my faves: Thermomix and low carb healthy fat.

Tell us a little bit about yourself, your family, what you do and what inspired you to lead a healthier lifestyle?
We are Daniela Doyle ‘the foodie’ and Michelle Kays ‘the chef’, we’ve been friends for about 15 years and have recently collaborated together to make low carb healthy fat recipes (LCHF) easy to make in thermo mixers.
Our plan is to eventually bring out recipes everyone following a low carb healthy fat way of eating can enjoy, not just thermo mixer users. We both follow a LCHF way of eating and hope to inspire others to do the same. Michelle is a fully qualified Chef and has a real passion for creating new recipes.
We started following LCHF after reading the latest research on following a low carb healthy fat diet. We are noticing the world seems to be slowly waking up to the fact that sugar is bad, and healthy fats are good. We choose to eat this way, because we truly believe it is the best way to eat, and are confident future generations will know this too.
We love that our recipes tick so many boxes, gluten free, grain free, sugar free, soy free, additive free! Perfect for coeliacs, diabetics, primal (easily adapted for paleo). The recipes are really flexible and forgiving too so easy to make substitutions or variations easily. What’s not to love about that?! 😉
What inspired you to start Thermo-Foodie and the Chef?
The low carb, healthy fat philosophy is gaining huge popularity and we found we weren’t alone in wanting a specific LCHF Thermomix Cookbook. We now have over 10, 500 members in our Facebook group in less than a year so it just goes to show how so many people are following or want to learn more about LCHF and need the recipes to go with that.
So our first cookbook Getting Started has 40 recipes in it!! Once we started we found it hard to narrow down and stop creating and cooking…. We think the book has great value for our members it has a HUGE selection of recipes to get you started on a LCHF way of eating.
In our next book, Delicious Dinners, we have decided to focus on where our members struggle the most… with delicious dinners the whole family can enjoy NOT just those doing LCHF. The last thing you want to do as a busy low carber is have to create separate meals for your family.
What exciting plans do you have coming up for the summer and 2017?
Our first cookbook, the first volume in our LCHF series was called ‘Getting Started’ and it proved to be really popular amongst our members so we were really motivated to provide low carb thermo mix users with even more recipes.
Our second cookbook, ‘Delicious Dinners’ has just been released and we have some really exciting plans beyond that with a few mini-ebooks underway and lots of amazing free recipes and videos for our members.
What tips would you give to someone who is just starting to make changes to their health and wellness?
The first thing we would encourage to anyone even thinking of adapting a low carb healthy fat diet is to quit sugar & reduce carbs. Just start there… just quitting sugar is enough to start you on the right path. When we say quit sugar… we do mean removing or limiting all forms of sugar in your diet, even maple syrups, rice malt syrups, coconut sugars etc, they all have the same effect on the body, causing an insulin response.
The other tip is to do some research. Information and knowledge is power and it can just be life changing. It’s so motivating to see people take control over their weight issues, mental health, reversing or managing diabetes and so many other health issues, just by cutting out sugar and carbs in their diet and enjoying healthy fats.
Do you have any tips for eating well on a budget?
Eating LCHF doesn’t need to be expensive.. yes it is great to eat all organic, grass fed meats, free range eggs and dairy & buy organic vegetables, but just do the best with what you can afford.
Also we have personally found that we only shop for real whole food and no more processed packaged food which is ultimately saving us a lot of money in the long run. Plus you end up eating less and feeling fuller for longer once you get into LCHF so you actually don’t even need to eat as much.
Leftovers work great with this way of eating too so it’s definitely affordable and there’s no need for expensive replacement foods and flours. We just eat real food.
What healthy dinner options would suggest to someone who is time poor?
It’s easy to keep things simple on a LCHF way of eating. Protein, vegetables and salad and add butter or some dairy. We love for example on a hot summers night a BBQ steak with a generous dollop of our Paris butter or just a yummy grass fed salted butter, served with a simple salad of cucumber, feta, olives, red onion and red capsicum, dressed with a lashings of olive oil and a spritz of vinegar. You can literally prepare the salad while the steak is cooking and have dinner on the table in 10 minutes.
What is something that you enjoy doing when you have some ‘me’ time?
We both have two children under 4, so there isn’t a lot of downtime on our own.. to be honest when we do have ‘me’ time – we work on recipes, research ideas or jump on Facebook and chat to our members, we love what we are doing so it doesn’t often feel like we need a break from it.
What is your favourite recipe to cook? Can you share the recipe with us?
Our all-time favourite recipe to cook is our quick, easy and delicious Butter Chicken with cauliflower rice recipe. It’s a great one to make after work for the family, you can get it on the table in under 30 minutes but it’s also a winner for a special occasion, it always impresses and is so delicious!
- 1 onion (approx. 100g)
- 10g cloves garlic, peeled (2 cloves)
- 10g ginger (4cm)
- 1 medium heat chilli (adjust depending on heat you like)
- 2 tsp sweet paprika
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp turmeric powder
- 1tsp cinnamon powder
- 3 Tbs ghee or butter
- 350g tomato puree
- 250g cream
- 2 tsp salt
- 40g almond meal
- 1 tsp garam masala
- 700–900g boneless chicken thigh cut into chunks
- Almond flakes and fresh coriander to serve (optional)
- Approx. 150g per person fresh cauliflower, broken into chunks
- Chop cauliflower 10 seconds / speed 5 / mc on, set aside in large steaming bowl
- If using whole almonds, mill here for 20 seconds / speed 10 / mc on, set aside
- Place onion, garlic, ginger and chilli into the mixer, chop 3 seconds / speed 5 / mc on, scrape down
- Add butter or ghee, salt, and all spices except garam masala
- Cook 3 minutes / varoma temp (115C) / speed 1 / mc off
- Add tomatoes, cream, salt and almond meal, blend 30 seconds / speed 6 / mc on
- Add chicken and cook 16 minutes / 100 degrees / reverse / speed 1 / mc on
- Remove mc and add garam masala to curry, then sit varoma on top with cauliflower rice inside the main bowl, cook varoma temp / 6 minutes / reverse / speed 1
- Serve curry on top of cauliflower rice
- Garnish with toasted almond flakes and fresh coriander if desired.
