This warm chicken salad is one of my go-to meals

Warm Chicken Salad

  • Yield: Serves one (adjust accordingly)


  • Chicken breast, cut into small pieces (approx 100gm per person)
  • Pumpkin (approx 100gms per person)
  • Baby Spinach LeavesĀ  (big handful per person)
  • Danish or greek feta, cut into squares (30gms each person)
  • Avocado, sliced (1/4 avocado per person)
  • Semi Dried tomatoes (6 per person)
  • Olive oil for cooking
  • Optional: Balsamic and olive oil to dress. However you may find the flavours from the ingredients are enough without adding anything extra


  1. Peel, cube and place pumpkin on a baking tray, lined with baking paper. Lightly spray with Olive Oil and bake at 190Ā° C for about 60 minutes or until cooked. Let cool for a few minutes
  2. Put fry pan on medium high heat and add some olive oil. Cook chicken until golden brown
  3. Add baby spinach leaves, avocado, feta, semi dried tomatoes, pumpkin, chicken and your dressing (optional) to a salad bowl and mix together.
  4. Serve and enjoy
